Karim Vionnet's Chiroubles is a high-altitude Gamay, ethereal and vibrant, made from 40-60 year-old vines rooted in granite and schist. This cru, the highest in Beaujolais, offers an almost mountainous freshness that Vionnet preserves with minimal intervention and minimal sulfur. The palate is vertical and crisp, a concentration of small red fruits, violets, and a mineral trail reminiscent of wet stone. Chiroubles Vieilles Vignes is Karim Vionnet's manifesto, a pure Gamay that captures the most ethereal and subtle essence of Beaujolais. Produced from the highest vineyards in the Cru, rooted between 300 and 500 meters above sea level on granite and schist soils, this wine vibrates with an almost mountainous freshness. The 40-60 year-old vines provide a depth that only time can create, resulting in a vertical, crisp, and extremely elegant palate. Crafted with love and minimal intervention, aged in used barrels to preserve the fruit, it reveals a hypnotic bouquet of violets, small red fruits, and a mineral trail reminiscent of wet stone. On the palate, it is a dance of acidity and savory, a lively and slender wine, with minimal sulfites that leave its vibrant soul intact.
