"Chiroubles Vieilles Vignes" - Karim Vionnet
Chiroubles Vieilles Vignes is Karim Vionnet's manifesto, a pure Gamay that captures the most ethereal and subtle essence of Beaujolais. Produced from the highest vineyards in the Cru, rooted between 300 and 500 meters above sea level on granite and schist soils, this wine vibrates with an almost mountainous freshness. The 40-60 year-old vines provide a depth that only time can create, resulting in a vertical, crisp, and extremely elegant palate. Crafted with love and minimal intervention, aged in used barrels to preserve the fruit, it reveals a hypnotic bouquet of violets, small red fruits, and a mineral trail reminiscent of wet stone. On the palate, it is a dance of acidity and savory, a lively and slender wine, with minimal sulfites that leave its vibrant soul intact. It is Beaujolais in its purest form: agile, deep and imbued with an irresistible drinkability.

Cellar: Karim Vionnet
Karim Vionnet's cellar is an example of how passion and innovation can transform a historic winemaking tradition into a contemporary and fascinating experience. Located in Villié-Morgon, in the heart of Beaujolais, the winery represents a new generation of producers who break away from traditional practices characterized by massive production, to embrace an artisanal and sustainable approach. The influence of Guy Breton, a key figure in the renewal of Beaujolais, is evident in Vionnet's philosophy.Under his guidance, Karim has learned the importance of respecting the land and working with methods that enhance the unique character of Gamay grapes, avoiding standardizations that can flatten the wine. The choice to use only indigenous yeasts and the renunciation of filtrations and clarifications are choices that reflect an authentic and respectful approach towards the final product. Vionnet wines stand out for their finesse and a dynamism that captures the essence of the different vintages, with a lively freshness accompanied by an elegant flavor. The aromas that emerge are those of red fruit, flowers and mineral notes, creating a complex and fascinating sensory experience. Karim's personal touch also emerges in the names of his wines, such as the Beaujolais Village “du Beur dans les Pinards”, which not only celebrates his North African origins, but also represents a link between different cultures through wine. This play on words is not only funny, but also testifies to Karim's identity as a winemaker and as an individual, blending his roots with his new life in Beaujolais. In summary, Karim Vionnet's cellar is not just a place of wine production, but a laboratory of ideas and a point of reference for quality viticulture that enhances authenticity and diversity, contributing to a significant renewal of the winemaking tradition of Beaujolais.
