Service
We taste it at a temperature of 16/18° in tulip glasses. Daily wine, but left to rest in the cellar a few years can give beautiful emotions. It is advisable to open it a few minutes before tasting.

In 2005, among the quiet hills of Monferrato, a shared dream took shape. It was the dream of Marta Peloso and Felice Cappa, who chose to bring Cantina Auriel to life with a clear vision: to produce wine in full respect of nature, allowing the land itself to guide every decision. The estate is located in Ponzano Monferrato, in the province of Alessandria, within a landscape of rolling hills, woodlands, silence, and open horizons. More than 60 hectares surround the property, yet only 3 are dedicated to vineyards. A choice that goes against the grain, almost intimate: to cultivate less in order to listen more. To observe every row, follow each season, and intervene only when truly necessary. Here, the land is not exploited — it is accompanied. The vines grow without the use of synthetic chemicals, cared for exclusively by human hands and biodynamic preparations that respect the natural rhythms of the earth. Every gesture is measured; every intervention is designed to preserve the balance of a biodiverse ecosystem. The vineyard is a living organism: it breathes, evolves, adapts. And those who cultivate it become its guardians, not its masters. In the cellar, time slows down. Fermentation occurs spontaneously, without selected yeasts, allowing the wine to express the true character of its terroir without filters. Sulfites are used in minimal quantities, only when strictly necessary. No forcing, no shortcuts. Each bottle is the result of a natural process, of patient waiting, of deep trust in the raw material. Cantina Auriel is not merely a place of production, but a life project. It is the choice to remain faithful to an idea of authenticity, to produce less in order to produce better, to respect the land today so it can be passed on intact tomorrow. Every wine tells this philosophy: it speaks of seasons, of hands stained with earth, of silent dawns in the vineyard. It does not seek to impress, but to move. A wine born from nature and returning to nature, carrying within it the truest soul of Monferrato.
