Excellent with first courses with meat sauce, seconds of meat, to try with a rabbit at the hunter.
Cellar: Domaine Jean Foillard
Domaine Foillard is located in the department of Sâone-et-Loire, in the heart of Beaujolais, the southernmost of the five regions of Burgundy. The company was born in 1981 thanks to Jean Foillard who bought a farm near the famous Côte du Py and immediately started to produce his wine, which in his intent was to produce a Beaujolais far from the stereotypes that companies had created in the years. Jean began to convert vineyards to the organic regime, with manual harvesting of grapes and limited use of copper and zinc, and in the cellar spontaneous fermentations with untreated clusters, indigenous yeasts and carbonated macerations as in use in Beaujolais. Eight hectares of vineyards, all planted at Gamay, the red grape vine in Beaujolais, which grow on land of Marmara origin. Surely it can be said that for forty years the Domaine Foillard has become a point of reference for the production of Beaujolais wines.
