Operaio di Icaro is a red wine obtained from a blend of white and red grapes. The grapes are fermented separately in fiberglass and then blended before bottling for a wine of great freshness, surprising acidity and crunchy tannin that lengthens the drink and completes it. There is everything, red fruit and minerality, body, acidity and balsamic hints.
Service
We recommend to taste it at a temperature of 16/18 ° in tulip glasses. Wine to be drunk immediately but left in the cellar for a few years can give great emotions.
Pairing
Excellent wine that goes well with aged cheeses or second courses of the land menu, it is ideal with Bordeaux-style fillet.

Icaro are four boys from Rome, two tenacious farmers and the illusion of starting a revolution in the Castelli. It will not be easy and it is not certain that they will succeed, but in the end ICARO is also this: let yourself be fooled by the beauty of your dreams. Their ambitions are to take back the places, the grapes, the wines, and give it new life, new vitality, new expression. The winery is located in Genzano, on volcanic soils, brazenly suited to the vineyard, surrounded by 250 hectares of wild forest with huge oaks, maples and cyclamen. In the vineyard only copper and sulfur are used, without intensive treatments. Looking west, you can see the sea from the vineyard. In the days of Ponente comes the perfume and the salt. In the cellar it is only spontaneous fermentation, very little So2, no filtration, no temperature control. Icaro are these, without oenologists, without great experience behind them but with clear ideas and a great desire to make a natural, popular, anti-elitist and understandable wine.
