Cellar: Chateau Le Puy
Chateau Le Puy is a splendid reality in Bordeaux that has been known since 1600. It has always been the property of the Amoreau family that over the centuries has been able to bring about continuous improvements. In 2000, Jean-Pierre Amoreau bought Château Pimpine, carrying the 51 hectares of Chateau Le Puy properties on the rocky plateau of Saint-Émilion and Pomerol, divided into three clay-siliceous-calcareous land plots. Vineyards are cultivated according to biodynamic principles and have an average age of 50 years. Planted mainly with the Bordeaux classics, which form the famous Bordeaux cut; Merlot, Cabernet Sauvignon and Franc, Petit Verdot and Carmenère, and some rows of white grapes such as Semillion and Sauvignon Blac. During the harvest the selection is very strict with the choice of individual grapes. After harvest, the grapes are brought to the cellar without being crushed, to avoid fermentation and unsupervised oxidation of the must, vinification is spontaneous with the only indigenous yeasts, and the aging is done in barrels and barriques for at least 24 months without the addition of anhydride sulfur for the whole process. Before bottling the wine does not undergo clarification or filtration operations. Chateau Le Puy produces eight wines, of which five are red, two white and one rose.
