Guillaume Overnoy's Cremant comes from chardonnay grapes. Aging in contact with the yeasts for at least 30 months. Domaine des Roches Neuves' Bulles de Roche is an expressive and mineral sparkling wine that was born and grown in Saumur, in the Loire, obtained from a blend of Chenin Blanc, 95% present, and Cabernet Franc, 5%. The base wine ages in wood used in which previously passes the Insolite It remains on the lees for 18 months. At sight it shows an intense yellow color. The scent recalls the citrus notes of grapefruit and lemon, on a pleasantly floral background of wildflowers and aromatic herbs. In the mouth it is savory and fresh, elegant and mineral. Crémant du Jura is a wine made from 100% chardonnay grapes. Second fermentation and aging on the lees for at least 16 months. Blossomed it is filled with the same wine. It offers a crystal color with light pale yellow reflections. The nose offers notes of ripe pear with important mineral notes. The palate is fresh, fat, concentrated on white fruit. The minerality in the finish accentuates the freshness.

The "BD'3C Brut Nature champagne by Bourgeois-Diaz is obtained from a cuveè composed of the 3 classic champagne vines; Pinot Meunier, Chardonnay and Pinot Nero, hence the name of the Cuveè 3C champagne. The base wine is aged for about 40% in wood. Second fermentation of at least 24 months on the lees before disgorgement. It has a straw yellow color with a fine and persistent perlage. The nose is citrusy of Amalfi lemon with notes of bread crust. On the palate its its characteristic is its fineness and elegance.

Gaz de Schistes by Domaine Durrman is an aromatic pet nat with citrus scents and a vibrant acidity. The name derives from the schist slopes from which the grapes come.
