Formica Pazza Gialla by Colle Formica is a macerated wine that comes from a blend of white grapes. Spontaneous fermentation with 7 days of contact with the skins. Aging in fiberglass until bottling. No addition of sulfur dioxide, no filtering or clarification. Easy to drink, fresh, light and flowing, it offers a clean sip and a radiant finish.

Maurice Choppin's Champagne L'Age Et La Raison is born from an assembly of Chardonnay and Pinot Meunier, which come from old vines planted on a terroir with a strong presence of limestone in the village of Damery. Spontaneous fermentation, wood processing of the base wines, and 36 months of aging on the lees in the bottle. Champagne that on the nose veers on notes of flowers and herbs as well as a classic crust of bread; in the mouth it is fresh, with hints of exotic fruit, creamy and mineral. Dosage Extra-Brut.

For the creation of Champagne Extra Brut "Bistrøtage" B.17, Charles bought the grapes from his mother Francoise Martinot, which is why both names are listed on the label. The B.11 cuvée is made from 100% Pinot Noir grapes from the 2017 harvest from the Chervey cru. One year of aging 50% in neutral oak barrels, and 50% in steel tanks. It is rosé Champagne with a predominantly fruity, citrus and mineral aromatic profile. The sip is fresh and dynamic, but very soft.

The Champagne Brut "Platine" by Nicolas Maillart is composed of a cuvée where pinot noir is dominant, with a complement of chardonnay and pinot meunier. The high percentage of reserve wines, from 30 to 40% which are aged in barrels, gives great regularity and style, richness and natural freshness. The Cremant d'Alsace by Domaine Durrman is a complex and crunchy wine made from a blend of Pinot Blanc, Riesling and Pinot Gris. The grapes are hand-picked as usual and in the cellar they are fermented with indigenous yeasts in stainless steel tanks. Refine on its lees for one year in the tank. The second fermentation is done with the addition of must. Bottled without filtration, without clarification and without added sulphites. Not dosed.A splendid wine thanks to the freshness of Riesling and the tension given by Pinot Bianco. This is Yann's largest production wine. 8000 bottles!

Marguet Extra Brut Grand Cru Shaman Champagne is obtained from a blend of Pinoy Noir and Chardonnay. The grapes come from vineyards grown in a biodynamic regime, located in the municipalities of Ambonnay and Bouzy. Refine for a period between 3 and 4 years. A champagne with a fine and very persistent perlage. On the nose the aromas are of great elegance and complexity, with hints of candied fruit, notes of exotic fruit and custard. On the palate it is full-bodied, creamy, with a very pleasant freshness. Long and persistent finish.

Les Murgieres Brut Nature by Francis Boulard is a very expressive Champagne made from Pinot noir and Meunier grapes. Fermented in oak barrels and aged for at least 24 months on the lees. The Champagne Blanc de Blancs Lalore di Val Frison is produced using 100% Chardonnay grapes that come from vineyards located in the village of Ville sur Arce, in the Côtes des Bar. No filtration, spontaneous malolactic fermentation and the use of indigenous yeasts make up the approach for the realization of this cuvée, with 6 months of aging on the lees in cask and another 16 sur lattes. Not dosed. A tense and crystalline blanc de blancs, raw, without unnecessary superstructures. Essential.

Brut Cuveè 60 is an intense and complex classic method sparkling wine based on chardonnay. 60 months aging on the lees. It has a golden yellow color with fine and persistent perlage. On the nose aromas of bread crust and evolved aromas of yellow paste fruit. On the palate the entrance is decided with slightly smoky notes that are accompanied by buttery, fat, full-bodied and very persistent hints.
