Manual harvesting in 12 kg crates and subsequent de-stemming of the grapes followed by a soft pneumatic pressing. Fermentation with indigenous yeasts and long maceration in old Burgundian barrels. 12-month elevation on the fine lees in old French fifth-passage barrels inside the cellar's ancient tuff caves. Bottling without filtration and clarification according to the lunar calendar.

Thomas Batardière represents one of the most fascinating figures in the contemporary Loire Valley wine scene. Born in 1980, Batardière entered the world of wine following an academic background in anthropology and cinema—a humanistic sensitivity that today translates into his ability to "read" and interpret his vineyards. His turning point came at the age of 28, when a chance encounter with wine evolved into a life mission. After a fundamental internship with Mathieu Vallée at Château Yvonne in Saumur and obtaining a viticulture degree in Beaune between 2009 and 2011, Thomas realized that his future belonged to the land. In January 2012, he decided to strike out on his own, purchasing approximately two hectares of old Chenin Blanc vines in Rablay-sur-Layon, Anjou. Here, he built his winery and home right next to that of the renowned producer Richard Leroy, with whom he has developed a deep bond of friendship and professional exchange over the years. From the very beginning, his agricultural management followed the principles of biodynamic viticulture learned during his training with Vallée, earning Demeter certification in 2015. Today, along with his wife Marie-Lise, Thomas meticulously tends to a total of 3.5 hectares: the heart of the production is Chenin Blanc (2.5 hectares between Rablay and Faye d’Anjou), supported by small plots of Grolleau (0.85 ha) and Cabernet Franc (0.15 ha). The vineyards, located primarily south of the Layon River, benefit from complex soils composed of clay, blue schist, quartz, and stone. Special attention is owed to the Montbenault parcel, characterized by volcanic soils and vines sourced from the prestigious massal selections of Domaines Huet and Clos Naudin in Vouvray. Batardière’s philosophy is centered on purity: he favors an early harvest and reductive work on the lees to preserve the freshness and integrity of the fruit, minimizing the use of sulfur. For Thomas and Marie-Lise, the role of the winemaker is not to "create," but to "reveal" the essence of the place through the vine: if the work in the vineyard is carried out with respect and precision, the task in the cellar becomes that of a silent and attentive interpreter of nature.
