Savagnin Ouillé En Bois d'Arnaux - Les Pieds sur Terre
Savagnin Ouillé En Bois d'Arnauxfrom Les Pieds sur Terre is an expressive and authentic white wine that fully reflects the unique character of the Jura and the producer's natural viticulture philosophy. Made from Savagnin grapes grown using organic and biodynamic practices, this wine is produced through spontaneous fermentation and aged in barrels using ouillage, a traditional technique that prevents oxidation, preserving its purity and freshness. In the glass, it presents a bright yellow color and rich, complex aromas: citrus, ripe white fruit, delicate floral notes, and a beautiful minerality reminiscent of the stone and Jura terroir. On the palate, it is characterized by vibrant acidity, balance, and a savory structure that makes it both fresh and profound, with an elegant aromatic finish.

Pairing
Excellent in combination with appetizers, vegetable first courses, fish main courses, to try with a turbot with orange sauce.
Winery: Les Pieds sur Terre
Les Pieds sur Terre refers to rootedness to the earth both in terms of human feet and feet of the screws. Although the Domaine has existed since 1978, when 10 hectares were purchased from Valentin Morel's grandfather, the real birth took place in 2014 when Valentin, a law graduate, returned from an oenology course in Alsace with a cultural background inspired by Steiner's theories and the readings of Fukuoka and Crawford. The foundations for the conversion to biodynamic agriculture had already been laid by his father in 1999 when he stopped using herbicides and began plowing the land manually. The winery's mantra is that 80% of the success of a wine comes from the vineyard and, consequently, from the life of the soil. Valentin is a very active militant vigneròn in his territory, where he involves young producers to encourage them to follow a work philosophy that is as effective as possible sustainable for the environment.
