Savagnin En Boutasse - Les Pieds sur Terre
The Savagnin "En Boutasse" by Valentin Morel is a skin-contact white wine of rare character, seamlessly blending emotional resonance, an extraordinary terroir, and a profound winemaking vision. The grapes come from old vines planted over forty years ago by Valentin’s father on prized, iridescent Triassic marl—a vineyard previously leased out that Valentin managed to reclaim and restore specifically for this special, exclusive vintage. Harvested entirely by hand, the grapes undergo a strictly natural winemaking process: three weeks of whole-cluster maceration, enhanced by the addition of about one-third Savagnin Rosé from the renowned Bois d'Arnaux vineyard. Fermentation and aging take place in stainless steel tanks for nearly a year—a choice that preserves the fruit's purity and freshness intact, free from any influence of oak. On the nose, it is surprisingly exotic and expressive; the maceration brings out an irresistible bouquet of lychee and rose petals, with aromatic qualities reminiscent of the richness of Gewürztraminer and the elegance of Moscato. On the palate, it impresses with its generous volume and wonderfully enveloping texture, balanced by a vibrant freshness that extends into an incredibly long, mineral finish.
Service
It is recommended to taste it at a temperature of 8/10° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.

It demonstrates exceptional versatility at the table: it pairs perfectly with ethnic and spicy dishes, aged and herbaceous cheeses, as well as delicate white meats, duck, and shellfish like red prawns or seared scallopse.

Les Pieds sur Terre refers to rootedness to the earth both in terms of human feet and feet of the screws. Although the Domaine has existed since 1978, when 10 hectares were purchased from Valentin Morel's grandfather, the real birth took place in 2014 when Valentin, a law graduate, returned from an oenology course in Alsace with a cultural background inspired by Steiner's theories and the readings of Fukuoka and Crawford. The foundations for the conversion to biodynamic agriculture had already been laid by his father in 1999 when he stopped using herbicides and began plowing the land manually. The winery's mantra is that 80% of the success of a wine comes from the vineyard and, consequently, from the life of the soil. Valentin is a very active militant vigneròn in his territory, where he involves young producers to encourage them to follow a work philosophy that is as effective as possible sustainable for the environment.
