A pure Sangiovese from old vines, naturally vinified using spontaneous fermentation and indigenous yeasts, with no added sulfur. It undergoes an 8-day maceration on the skins and is aged first in glass-lined concrete tanks and then in large wooden casks. Fresh, juicy, and dynamic, with aromas of cherry, violet, earth, and aromatic herbs, and fine tannins. An elegant, authentic red wine that is incredibly drinkable.

Le Selezioni Le Cese - Collecapretta
"Le Selezioni Le Cese" is a pure Sangiovese crafted from a selection of Collecapretta’s oldest vines. It is a natural red wine, produced via spontaneous fermentation using only indigenous yeasts and with no added sulfur dioxide. After macerating on the skins for approximately eight days, it is aged in glass-lined concrete tanks followed by a period in large wooden casks. In the glass, it displays a clear, pale ruby red hue. The nose reveals notes of fresh cherry, violet, earth, leather, and aromatic herbs. On the palate, it is fresh, juicy, and highly drinkable, featuring fine, dynamic tannins. An authentic, elegant, and vibrant Sangiovese that immediately conveys the character of the old vines.
Service
We taste it to a temperature of around 16/18° C in tulip glasses. Wine to be drunk immediately, but if left a few years in the cellar can give great satisfaction.
Pairings
The Selezione Le Cese goes well with tasty main courses of meat, hard cheese, try it with grilled lamb shoulder.
Cellar: Collecapretta
Collecapretta is a small company that is in the Third Parish, location close to Spoleto, in the Umbrian countryside. Run by Vittorio Mattioli with the precious help of his wife Anna and Anna's daughter, whose business covers all aspects of the campaign, not only the cultivation of vines, but also wheat, which provides him with the flour and feed for animals, olive trees and the breeding of small poultry. Five hectares of vineyards located in the hills at an altitude between 400 and 550 s.l.m., well ventilated and composition of clay soils.
