Marroca - Manuel Pulcini
Manuel Pulcini's Marroca is an elegant and vibrant white wine obtained from a blend of Trebbiano, Malvasia, Vermentino and other white grape varieties. The name derives from an ancient Tuscan word that indicated the monster of the well that frightened children. The vinification takes place in several phases in fact, after the destemming-crushing the must undergoes a cold decantation which varies between 12 and 72 hours and which allows to obtain a must with noble lees. A spontaneous fermentation is then performed using a technique called self-saturation with full tank; this particular technique allows to broaden and enhance the aromatic spectrum of Trebbiano, the main grape variety of this wine. It continues its aging for 6 months in steel.
Service
We taste it at a temperature of 10/12 ° in a tulip glass. Wine to drink immediately but can give fantastic emotions if left a few years in the cellar.
Pairing
A wine for any meal that goes perfectly with first courses, grilled and stewed fish, to try with an octopus in the sauce.

The project that the winemaker Manuel Pulcini pursues with energy and passion is to promote healthy agriculture and natural winemaking. The farm is a winery that bases its business on the recovery of abandoned vineyards within the province of Lucca, with the aim of saving the rich wine heritage and making it rediscovered and appreciated. Following the principles of ethical agriculture, natural wines of current conception are produced, thanks to the combination of ancient traditions and innovative oenological transformation procedures without the use of synthetic elements in the vineyards and without aggressive sophistication in the cellar. Thanks to previous experiences and the support of friends, Manuel Pulcini has rented 1.8 hectares of abandoned vineyards in the small village of San Macario a Monte, in the province of Lucca, and other small plots in Tuscany for a total of 2.5 hectares.
