"Il Bianco" - Il Torchio
Il Torchio's Bianco is made from Vermentino grapes from approximately 15-year-old vines. Harvest takes place in early September, followed by vinification in stainless steel. Approximately half of the grapes undergo a brief two-day maceration on the skins, giving the wine greater complexity and character. After fermentation, the wine ages on the fine lees in stainless steel tanks for four months before bottling. In the glass, it stands out for its freshness and elegance, with an aromatic profile reminiscent of fresh fruit, white flowers, and Mediterranean herbs. A harmonious and refined wine, an authentic expression of the terroir.
Service
We taste it at 10/12 ° in tulip goblet. Daily wine but left a few years in the cellar can give you great emotions.
Pairing
Great with a salty salmon cake, fish dishes, to try with a fish soup.
Cellar: Il Torchio
ll Torchio is a young family-run business located in Castelnuovo Magra, in the province of La Spezia. The winery that was born from an initiative of Giorgio Tendola, precursor and forerunner of the cultivation and enhancement of Vermentino in the Colli di Luni, who died a few years ago. Today at the helm we find his grandchildren, Gilda and Edoardo, who in the wake of deep-rooted family traditions have chosen to continue along the path traced by Giorgio himself, carrying out the design and intentions. Gilda, with a degree in law, is responsible for the commercial and administrative aspects, while Edoardo is in charge of production, assisted by his uncle Claudio Musetti and Alessandro Chesi. 12 hectares of organically grown vineyards, all gathered in a single plot and all falling under the denomination of origin "Colli di Luni", cultivated with Vermentino, Canaiolo, Merlot and Sangiovese. In the cellar we try to intervene as little as possible with spontaneous fermentations and more or less long macerations in order to have very territorial wines enhanced by the lively and imaginative labels by Francesco Musante.
