"Orange" - Abbazia San Giorgio
The Orange is a white wine macerated on the skins for about 15 days obtained from Zibibbo grapes. Whose grapes come from old bush-trained vines, which are found on the land of Pantelleria volcanic origin. The manual harvest begins in September, and in the cellar the grapes, after destemming and the crushing, are fermented spontaneously in steel tanks, with maceration in contact with the skins that lasts 30 days. It refines in chestnut barrels for 6 months. In the bottling phase neither filtration nor clarification takes place. Zibibbo "Orange" is a deep yellow color tending to orange. The nose is explosive, with aromas of tropical fruit, candied citrus fruits, floral notes and Mediterranean herbs. The taste is warm, fresh, with splendid sapidity and an elegant and very long finish.
Service
We recommend tasting it at a temperature of 12/14 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairing
Excellent wine that goes well with fish appetizers, first courses, fish dishes, to try with slices of grilled swordfish.
Winery: Abbazia San Giorgio
The company Abbazia San Giorgio is located on the island of Pantelleria. Here viticulture is so difficult to be called "heroic". The company was founded in 2015 by Battista Belvisi, an agronomist expert in ecological viticulture and "natural" winemaking. Battista leads about 3.5 hectares of vineyards located in Khamma, in the south-eastern part of Pantelleria Island. The vines are run in biodynamic and bred in Zibibbo, Grillo and Pignatello, Carignano and Nerello Mascalese. All the vines are grown with the typical pantesco system, that is to say alberello, the only system that allows the growth of the vine on this island. Baptist in the vineyards does not use pesticides, cryptogams or any other type of chemical, but only small amounts of copper and sulfur. The grapes are harvested by hand with selection of grapes. In the cellar, fermentation takes place spontaneously by indigenous yeasts and both red and white are vinified in red with long maceration.
