Service
We taste it at a temperature around 8/10° C. Wine to drink in the vintage but left in the cellar for a few years can give you great emotions.
Pairings
Excellent as an aperitif, it is perfect with seafood salads, shellfish, soft cheeses, to try with a risotto with sea steals.
Winery: Weingut Schmitt
Beware of those two, it's easy to fall in love. Winery with 230 years of history now run by Bianka and Daniel, a couple in life and work who have managed 16 hectares of vineyard for ten years. Bianka is Hungarian, Daniel is German. They met in 2012 when she was a cellarman in his family's cellar. Together they have taken over the company and are producing excellent natural wines with no additions. The teachings of Patrick Meyer, legendary Alsatian vigneron, were fundamental, which allowed to metabolize and practice serious biodynamics (Demeter certified since 2012, together with only 80 other German wineries). The common denominator of the wines is a continuous experimentation flanked by minimal manipulations and bottling without filtration and very low doses of sulfur added only when necessary. To do the rest, Rheinhessen: Germany's largest wine region is usually associated with mass production but in recent years the region's reputation has started to change thanks to a new generation of talented young winemakers working organically in the vineyard , reducing harvests and enhancing the excellent and underrated terroir they possess. The vineyards are spread over various plots in Flörsheim-Dalsheim, Monsheim and Kriegsheim.
