Piandorino - Pian dell’Orino
This pure Sangiovese is made from a selection of grapes from the company's Cancello Rosso, Pian dell'Orino, and Pian Bassolino vineyards, with vines ranging in age from 8 to 17 years. The wine expresses the complex diversity of Montalcino's soils, characterized by a significant clay content that lends intense, fresh, fruity aromas, and enriched by a volcanic element from nearby Monte Amiata. Production follows rigorous standards: after harvest, the grapes are selected in three successive phases using a destemmer, a manual sorting table, and a final optical selector. The process continues with fermentation for approximately 9 days at a maximum temperature of 29°C, followed by 18 months of aging in 12.5 and 30 hl oak barrels. The result is a highly refined and complex flavor profile, distinguished by a remarkable propensity for aging.
Service
It is advisable to serve it at a temperature of 16/18 ° in tulip goblets. Wine to drink immediately but leave some ano in the cellar can give great emotions.
Pairing
Ideal with well-dressed pasta dishes, red meats, great with vegetarian lasagna.
Cellar: Pian dell’Orino
The story of Pian dell’Orino began in Montalcino with the meeting between Caroline Pobitzer from South Tyrol, founder of the estate, and Jan Hendrik Erbach from Germany, an agronomist and oenologist who initially joined as a consultant. Now partners in both life and work, the married couple leads the estate with an extraordinary synergy that blends warm Mediterranean passion with rigorous Teutonic precision. Across the property's 6 hectares, managed according to the principles of biodynamics, every single detail—from the work in the vineyard to the processes in the cellar—is tuned in perfect harmony to fully elevate Sangiovese, the only grape variety cultivated here. The result is a wine of great character and depth that immediately reveals itself as fleshy and savory, before evolving into a silky texture that richly rewards those who have the patience and foresight to wait for it.
