Rossese - Le Rocche del Gatto
Rossese di Rocche del Gatto is a red wine made from Rossese grapes. The vine takes its name from the color of its berries. It is widespread especially in the Ligurian Riviera of Ponete on the border with France. The Rocche del Gatto grapes come from the hinterland of Albenga, in the municipalities of Vessalico and Borghetto d'Arroscia. After harvesting the grapes, ferment for three weeks in contact with the skins with temperature control in order to protect the primary perfumes, giving it more minerality and a more complex and harmonious aroma. Refine in steel tanks with a long stay on the noble scum. Rossese is a light ruby red color, limpid and bright. The nose has intense and persistent aromas of small red fruits, floral and slightly spicy notes. At the sip it is warm and enveloping, soft with a pleasant tannic note, soft, good freshness and good ending with a fruity closure. Rossese di Rocche del Gatto is a wine for all meals, easy to drink and very palatable.
Service
We recommend tasting it at a temperature of 16/18 ° in tulip glasses. Daily wine but holds the time very well.
Pairing
Excellent with hors d'oeuvres, savory first courses, aged cheeses, to try with penne with ragu.
Cellar: The Rocche del Gatto
The company Le Rocche del Gatto is located in the hinterland of Albenga in Liguria, immersed in the hills of Bastia that surround the plain of Albenga. The owner of the company is Fausto De Andreis with a past at Olivetti di Ivrea, who in 1982 set out to dedicate himself to the one he loves most in life. This is how the adventure of Le Rocche del Gatto begins, the name chosen in honor of his wife Caterina, always surrounded by a sea of cats. In seven hectares, Fausto cultivates cultivates Ligurian vines such as Pigato, Vermentino, Rossese and Ormeasco. One of its most famous wines is definitely the Spigau, a name given after its Pigato was rejected the classification DOC in 1995. The Spigau is a Pigato which is macerated on the skins for a few days in order to have a more complex aroma. Today the company Le Rocche del Gatto produces about 75 thousand bottles a year. The wines of Le Rocche del Gatto are austere and complex, far from the classic Ligurian wines and closer to the stylistic canons of wine-growing areas like the Moselle. Over the years they acquire hints of hydrocarbons and toasted, always maintaining a lively acidity. Never banal wines become cult among fans.
