Christian Tschida's "Non-Tradition" is a fascinating example of how combining different parcels can create a unique and complex tasting experience. Wasenhaus Chardonnay is an elegant wine, with delicate acidity and beautiful salinity, where you can feel the Burgundy experience of Christoph Wolber and Alexander Götze. Vinification with spontaneous fermentation in used barrels of different sizes. It is then aged first in barrels for 12 months and then in stainless steel tanks for 6 months before being bottled without filtration and with minimal sulphur.
