Le Berceau des Fées is a crystalline wine to say the least, with a super expressive and clear nose, clear with aromas of flowers and aromatic herbs. The sip is dry and slender, the mouth is very clean and stretches dancing on the tips to end in a bouquet of flowers. Obtained from chenion blanc grapes that come from the two-hectare vineyards less than ten years old at exactly 372 meters above sea level, bordered by a row of trees nicknamed "the cradle of the fairies". In winemaking the grapes are delicately pressed, and fermentation lasts about two months, only in steel. Subsequent refinement for six months in the same tanks. Service

The Domaine aux Moines has an incredible history, just think that there are traces dating back to 1130 of vineyards planted in this plot by Cistercian monks (Domaine aux Moines literally stands for "House of the Monks") and since then the wine has been produced continuously. In the 1920s, the company briefly belonged to the German Benz family. Today the reins of the Domaine are in the hands of Tessa Laroche who together with her mother, Monique, manages this 12 hectare jewel with vineyards all around the estate with an average age of 50 years (and immediately bordering another local legend, the Coulée de Serrant by Nicolas Joly). In 2011, Savennières Roche aux Moines became an appellation in its own right due to the unique character that Chenin acquires here. The management of the vineyards, exposed to the South/South-West, protected from the cold winds of the North, on predominantly shale soils with the presence of clay and sandstone, has been certified organic since 2006 and characterized by very low productivity and very high potential. The presence of the Loire river nearby protects against spring frosts and acts as a fundamental thermal driver for the ripening of the grapes.
