Ripa di Sopravento is a sparkling wine obtained from white grapes with the method of spontaneous refermentation in the bottle, as per the centuries-old tradition in Emilia and beyond. The nose is aromatic, with notes of fruit, hints of cream and coconut. In the mouth it is structured, with nice carbonic, very mineral, very tasty and fresh that invites to drink, nice finish.

The Cuvee 60 Pas Dosè Rosè by Casa Caterina is an intense and complex classic method sparkling wine that embodies the essence and passion of the two producers Aurelio and Emilio. Born from pure Pinot Noir grapes, grown with care and respect, this classic method expresses its personality through a long evolution on indigenous yeasts for 60 months, which gives it complexity and depth. Disgorgement "à la volée", without dosage, preserves its integrity and purity. The intense pink color and the fine and persistent perlage release aromas of pomegranate and rose petals. The palate instead enjoys ample freshness and minerality. To be enjoyed with an aperitif before meals, or in combination with a scampi cream risotto.

“Uva d'oro” by Mirko Mariotti is a sparkling wine made from Fortana grapes obtained with long re-fermentation in an autoclave. ""RBL" dei I Clivi is an atypical sparkling wine. The second fermentation differs from the traditional charmat or classic methods as it takes place in the first fermentation. Towards the end of the fermentation, when the residual sugar is around 25 grams per litre, i.e. a quantity which, when dry, brings the pressure to 6/7 atmospheres, the tank is closed so that the CO2 released by the fermentation of the remaining sugar is trapped in wine. The wine is then left in the same tank to mature on the lees and after two months it is bottled at constant pressure. The sparkling wine made in this way maintains the primary aromas characteristic of the vine, all played on finesse and minerality.

Bett is an ancestral sparkling red wine made from red grapes and produced in just over 200 bottles. The grapes come from a vineyard that was planted between 1970 and 2000. Bett is the voice of the Carpenetese dialect of the second half of the nineteenth century, and means “sprout, throw”. It matures for about 6 months in terracotta amphorae, before being transferred to the bottle for refermentation. A wine that proves very fresh on the sip, with excellent acidity and gritty tannins, very drinkable.

Les Vignes de Trelou Blanc de Noirs by Tristan Hyest is a Champagne resulting from a cuvée obtained from 60% Pinot Meunier and 40% Pinot Noir. To the 2018 vintage, which constitutes approximately 70%, 30% of reserve wines from the two previous vintages are added. "Les Vignes de Trelou" has a fine and persistent perlage. Aromatic and mineral on the nose with notes of cooked white pulp fruit. The flavor is fresh and lively, pleasant and long-lasting. A very limited number of these bottles are produced, around 750 per year.
