Spontaneous fermentation of 4-5 days, and then bottled with a residual sugar in order to favor refermentation. Aging on its lees for 13 months, and disgorging in October of the year following the harvest. No filtration or clarification.

Alba Pet Nat White by Vinos Ambiz is a sparkling wine made from Albillo real and Airen grapes. The wine is bottled before the first fermentation in order to obtain a second fermentation, a natural refermentation during the spring following the harvest.
