Refine from 18 months to 36 months depending on the vagaries of the weather. Undosed degorgement, without adding sulfur. A wine of great flavor, fragrant and mineral. It is versatile and ideal to be consumed during informal aperitifs.

"Les Vignes de Montgueux" by Jacques Lassaigne is a lively Champagne, with aromas of dried fruit and citrus, supported by a straightforward acidity and good minerality. Guillaume Overnoy's Cremant comes from chardonnay grapes. Aging in contact with the yeasts for at least 30 months. A vein of bright golden yellow with a nutty impact on the nose, from a long evolution on the lees, with lots of pulpy fruit, sunny, round, long, rather savory, with a hint of shell and vinous return.

Domaine des Roches Neuves' Bulles de Roche is an expressive and mineral sparkling wine that was born and grown in Saumur, in the Loire, obtained from a blend of Chenin Blanc, 95% present, and Cabernet Franc, 5%. The base wine ages in wood used in which previously passes the Insolite It remains on the lees for 18 months. At sight it shows an intense yellow color. The scent recalls the citrus notes of grapefruit and lemon, on a pleasantly floral background of wildflowers and aromatic herbs. In the mouth it is savory and fresh, elegant and mineral. Maurice Choppin's Champagne L'Age Et La Raison is born from an assembly of Chardonnay and Pinot Meunier, which come from old vines planted on a terroir with a strong presence of limestone in the village of Damery. Spontaneous fermentation, wood processing of the base wines, and 36 months of aging on the lees in the bottle. Champagne that on the nose veers on notes of flowers and herbs as well as a classic crust of bread; in the mouth it is fresh, with hints of exotic fruit, creamy and mineral. Dosage Extra-Brut.

Les Murgieres Brut Nature by Francis Boulard is a very expressive Champagne made from Pinot noir and Meunier grapes. Fermented in oak barrels and aged for at least 24 months on the lees.
