The Jacques Lassaigne maison is located in Montgueux, a village located a dozen kilometers north-west of Troyes. Since 1999 the maison has been managed by Emmanuel, Jacques' son, who cultivates just over 4.5 hectares, all planted with Chardonnay, the protagonist vine in this particular terroir characterized by a fundamental vein of chalk and limestone. Emmanuel carries out meticulous work in the vineyard, pursuing a non-interventionist viticulture, relying on biological and sometimes biodynamic principles. In the cellar, the grapes from the 9 owned parcels are vinified in different ways, the first fermentation takes place with only indigenous yeasts in steel or wooden containers. Emmanuel disgorges all bottles by hand, a very rare practice in Champagne where mechanization is the norm. Its wines are of extraordinary character and finesse. "Les Vignes de Montgueux" by Jacques Lassaigne is a lively Champagne, with aromas of dried fruit and citrus, supported by a straightforward acidity and good minerality. Produced with Chardonnay grapes, the base wine is aged in wooden barrels for 12 to 24 months, followed by the second fermentation in the bottle with a long stop on the lees before disgorgement.
