Bergianti's "No Autoclave" is a wine that screams at the top of its lungs the tradition of refermented in Emilia, which is not an autoclave. The Champagne Extra Brut Bulles de Comptoir 12 Caché dans l'evidance by Charles Dufour is a Champagne from the Cote de Bars obtained from a blend of Pinot Noir, Chardonnay and Pinot Blanc. The majority of the blend (80%) is made with the 2021 vintage, (year in which Dufour lost 80% of the production due to the combined effect of frost, downy mildew and botrytis), the rest 20% with 2010 reserve -2020 and reserve 1982-2009. Fermentation occurs spontaneously with indigenous yeasts. The refinement in Burgundian pièce and large barrel continues. No clarification or filtration before bottling.
