An artisanal wine is produced by the work of an independent vintner who cultivates its vineyards, with the aim of producing wines that are as close as possible to the mirror of the territory and culture from which they come, respectful of the cycles of nature. In the vine they try to completely exclude insecticides, herbicides, additives and any chemicals using only copper and zinc when needed. In the cellar the interventions are minimized so as not to frustrate all the work that has been done in the vineyard. Fermentations are spontaneous with only native yeasts without adding sugars or concentrated musts and without acidity adjustments or addition of other additives. In most cases no filtration or clarification is carried out before bottling. Many natural wines do not contain sulphites, but we can also consider wines that do not exceed 30 mg per liter. Choosing to add a small amount of sopfiti depends on the season's performance and refinement in the cellar.
