A 'la Voleè by Fra I Monti is a sparkling wine produced through the second fermentation in the bottle from white grapes. For the second fermentation in the bottle the same must is used, preserved until the following spring, a period in which the foaming takes place. It is not filtered or disgorged, it is therefore exposed with an evident deposit. A 'la Voleè is a very carefree and friendly bubble that gives aromas of citrus and yellow apple, and a fresh acidity in the mouth, and a surprising pleasantness to drink.

"Funky" evokes the winery's experimental approach to the winemaking of this ancient Lazio grape variety. Manual harvesting in small crates is followed by vinification using two distinct methods: half the grapes are pressed directly, and the other half macerate on the skins for 24 hours before pressing. The wine matures for eight months in stainless steel. Bottling follows, followed by eight months of bottle aging before release. This experimental wine demonstrates how double vinification and the longevity of the vines can lend structural complexity and territorial depth to this Lazio white wine, both ancient and modern in character.

Emotiq is the company's first white wine, obtained from Rhenish Riesling grapes, planted on red soils of volcanic origin and white sandstone soils. Spontaneous fermentation, aging in tonneaux. A wine with a golden yellow colour, with notes of fresh fruit such as pear and an aroma reminiscent of musk, ending in a note reminiscent of bitter almond. It is a fine wine, but with a cheerful and tonic character with a taste that ends with flavor, thanks to the crunchy Rhenish riesling.

Rosso Castagno by Gazzetta is a blend of red grapes that comes from 25-year-old vines planted on soils rich in clay and limestone. Fermentation mostly in whole clusters for three weeks, before nine months in chestnut barrels. Incredibly fruity with notes of black cherry and balsamic.

Collepazzo is a Cesanese di Affile in purity, grapes resulting from the blend of different volcanic and sandstone soils. Spontaneous fermentation without chemical additions and then 10 months of aging in concrete and 6 months in bottle. An artistic and multifaceted wine, in the sense that what might appear low in alcohol and poorly structured, actually has intense fruit and high drinkability but with structure and alcohol present, but absolutely not perceptible. Note of red fruit, wet earth and wild sensations are the masters.

"Sempre In Due" by Fra I Monti is a white wine aged in amphorae produced from white grapes. The grapes come from a small vineyard of only one hectare with a very low yield, which grows on clayey and loamy soils. The grapes are harvested at the end of September, and in the cellar after destemming are fermented spontaneously in open vats with maceration on the skins for 6 days. After the racking the fermentation in amphora ends without temperature control. The wine is then aged on the lees for 8 months in amphorae. Sempre In Due is a wine with fresh and fruity aromas, with a beautiful body, soft, fresh and sapid. Long enough finish.

Wine produced only in large vintages with local red grapes. The vineyards are located between 400 and 500 meters above sea level with east / south-east exposure, on volcanic soils that bring a lot of minerality to the wines. Spontaneous fermentation with maceration on the skins for a month. Ages one year in cask and two years in bottle. A cult wine that tastes of red berry fruit, spices, fresh and mineral, to be kept in the cellar and drunk among some to let it express its full potential.

The Monocromo Rosso by Mario Macciocca is a complex red wine made from Cesanese di Affile grapes. Refine for a few months in steel. The nose is mainly expressed with fruity notes. The mouth is structured with abundant tannins and a nice dynamic taste.
