Guillaume Overnoy's Cremant comes from chardonnay grapes. Aging in contact with the yeasts for at least 30 months. A vein of bright golden yellow with a nutty impact on the nose, from a long evolution on the lees, with lots of pulpy fruit, sunny, round, long, rather savory, with a hint of shell and vinous return.

The Marnes Grise Arbois Rouge by Guillaume Gilet is a red wine obtained from 100% Poulsard grapes. The grapes are only partially destemmed before fermentation and macerated for 13 days on the skins. After fermentation, the wine ages for 10 months in steel. Notes of red fruit and spices emerge on the nose. On the palate it is warm, full-bodied and complex, fresh with fine tannins and a long persistence. A wine full of enthusiasm, which can be drunk in one go.

The Macvin du Jura by Domaine de la Tournelle is the classic fortified wine from the Jura, produced from Chardonnay grapes to which Marc du Jura is added, the area's spirit traditionally aged for around 24 months in barrels. During fermentation this brandy is added to block it and leave a natural sugar residue. The Macvin du Jura by Domaine de la Tournelle is a truly niche product, which is aged for up to 7 years in wooden barrels. On the nose it has aromas of figs, ripe pear, plum, but also reminiscent of walnuts and raisins, a high alcohol content and a generous residual sugar accompany everything. It is a perfect wine to conclude a lunch or dinner, but also as an aperitif.

Naturè in the local dialect is the old name of Savignin. In this cuvée it comes from 50-55 year old vines. The grapes are harvested late by hand, in order to have a better expression of its character. Spontaneous fermentation, aging in steel and bottling without filtration. The Pinot Noir of Les Chais du Vieux Bourg is an elegant and fresh wine obtained from the grapes of the same name that come from the vineyard called Les Vernois which rests on soils composed of calcareous marl from Lias. It is an old Pinot Noir vineyard over 50 years old, made with vines from a mass selection of the best plants on the estate, selected on the basis of the quality and aromatic intensity of the grapes. Manual harvest and, in the cellar we proceed to the destemming and spontaneous vinification with a maceration on the skins for a couple of weeks. It is then aged in oak barrels for 2 or 3 years and is bottled with the addition of a very low percentage of sulphites.

The "Charmille" by Guillaume Overnoy is a Chardonnay in purity, from a selection of a historical parcel of the domaine. These vineyards have been active for about 4 generations and we can find vines in production from a minimum of 5 years of age up to a maximum of 80 years. After the manual harvest, the must remains for at least 11 months in large barrels, then producing an intense wine with a great personality and capable of expressing more expressive characteristics after a few years of aging.

Savagnin from Les Chais du Vieux Bourg is a white wine made from the grapes of the same name that come from 45-year-old vines that grow on blue marl subsoil under a layer of ice. Aging of 2-3 years in small barrels on fine lees, without decanting. Average quantity produced: 1,500 bottles per year. A delicious and structured wine that offers aromas of white berry fruit, citrus and mineral notes.
