Patchwork is a blend of Chardonnay from numerous small parcels, harvested by hand. The process takes place with whole bunches, followed by partial fermentation in steel and wood for about 9 months, with subsequent maturation in small woods. Malolactic, carried out to soften the powerful acidity, helps create a complex profile. It is an unfiltered and unclarified wine, which presents notes of citrus such as grapefruit on the attack, followed by hints of pastry and buttery due to aging in wood, giving a denser texture. "Funky" evokes the winery's experimental approach to the winemaking of this ancient Lazio grape variety. Manual harvesting in small crates is followed by vinification using two distinct methods: half the grapes are pressed directly, and the other half macerate on the skins for 24 hours before pressing. The wine matures for eight months in stainless steel. Bottling follows, followed by eight months of bottle aging before release. This experimental wine demonstrates how double vinification and the longevity of the vines can lend structural complexity and territorial depth to this Lazio white wine, both ancient and modern in character.
