Faia by Mai & Kenji is an expressive, complex white wine with excellent acidity. The “Selva di Sotto” by La Staffa is a fine and harmonious white wine, with a strong and refined personality, the result of the vinification of a particularly suitable Verdicchio cru, planted in 1974, and of a chat between Riccardo Baldi and Carlo Pigini, already director and oenologist of the Colonnara winery in Cupramontana. A Verdicchio that was born inspired by ancient traditions, in which no sulfur dioxide is added during the production process and the must is left to cool with the ancient technique of decanting air. Vinification and aging take place in concrete tanks.

The Bianco by Testalonga is a wine that is produced with local grapes and which macerates on the skins for 5 days. The grapes come from old vines grown between the sea and the mountains. The bunches are harvested manually, and in the cellar they are pressed with the feet without destemming. Fermentation is spontaneous with the use of only indigenous yeasts, and maceration on the skins lasts 5 days. Refine in old barrels for several months. A wine that offers mineral and brackish notes, with hints of aromatic herbs, citrus fruits and hydrocarbons. On the palate it is juicy, fresh, and very savory.

The Piesporter Goldtröpfchen Kabinett by Julian Haart is a taut white, with sharp acidity, crisp and consistent structure. Quartz Blanc by Les Cailloux Du Paradis is a wine made from Sauvignon Blanc grapes grown on a vineyard planted on soils rich in sand and quartz. The grapes ferment in used barriques, where they then age for 18 months. Upon opening, the nose is timid with light notes of green apple. A little oxygen is all it takes for it to explode with notes of brown sugar, cinnamon, celery, cucumber, and a hint of nutmeg. Naked White by Weingut Heinrich is a wine made up of almost 70% Chardonnay, 10% Pinot Blanc and a few other white grape varieties from the eastern part of Lake Neusiedl.
