Sancerre Blanc Akméniné - Domaine Sebastien Riffault
Obtained from Sauvignon grapes coming from limestone soils. Vinification takes place in barriques with a slow fermentation that can last up to three months. The next aging is on yeasts for 12 months. The barriques used for aging are between 8 and 15 years old. Sulfurized Zero added before bottling. Much richer than the classic Sancerre, the color is amber with aromas of apple, mango, mint and yeast. Fresh and full of palate, followed by a long finish with notes of citrus, herbs and minerals.
Service
We taste the Sancerre Blanc Akméniné a temperature of 8/10 ° in the tulip glass. Wine to drink immediately but will express the best of itself in a few years.
Pairings
The Sancerre Blanc Akméniné is great with seafood, with fish dishes, to try with a seafood lettuce.
Cellar: Domaine Sébastien Riffaul
The Domaine Sebastien Riffault is a historic wine cellar in the Loire since it was founded in the 1900s. In the last few years, the 20-year-old Sebastien, who in a few years turned it off like a sock for producing wines that were terroir's expression, took over. 12 hectares of vineyards stretching in the municipalities of Sancerre, Verdigny and Sury-en-Vaux, all planted with Sauvignon Blanc, which in these limestone and silica soils has found the place to grow. Sebastien Riffault is very attentive to nature, its vineyards are bred in biodynamic and to use them again to use the horse to keep the ground soft. In the cellar only spontaneous vinification, no clarification or filtration and sulfur is added only in small part in the "Le Rouet" wine. The names of the wines are in Lithuanian, in honor of Sebastien Riffault's wife: Auksinis, which represents golden, Skeveldra, who wants to stone a piece of stone and finally Akménimé, that is made with stone. Very vertical wines, unbleached minerals.
