Bajola Bianco is a macerated wine that comes from white grapes through an old winemaking process in use on the island of Ischia. The color is intense golden yellow. On the nose the aromas are various of white peach, pineapple, cedar and a mineral background. On the palate it is full-bodied, with solid structure and flavor. The ending is endless.

Alcohol content: 13%.
Aging: 6 months on its lees and on the skins in the same millstones used in winemaking.
Contains no added sulphites, less than 10 mg / liter.

Bajola Bianco - Bajola
Bajola Bianco is obtained through an old winemaking process on the island of Ischia. A vitrified tank is used at ground level and filled with untreated grapes. When the tank is full, inert gases are added and fermentation begins with maceration on the skins. Once the fermentation is over, it is pulled and refined in steel tanks. The White Bajola is obtained from a blend of white grapes. The color is intense golden yellow. At the nose the scents are various of white peach, pineapple, cedar and a mineral background. On the palate it is of body, with a solid structure and sapidity. The ending is endless.
Service
We recommend tasting the Bajola Bianco at a temperature of 10/12 ° in balloon goblets. Wine to drink immediately but if left a few years in the cellar can give great emotions.

The Bajola Bianco is combined with seafood and vegetarian dishes, to be tried with a pasta with mussels.

Bajola is a micro project born of an idea by Francesco Iacono, a renowned oenologist, who decided to return to Ischia and start to vinify as it used to be, with palme and vinification in the vineyard. To do this he retrieved an old water collection tank right in the middle of the vineyard. Clean and vitrified now serves to vinify its wine. Once harvested grapes are diraspat and by fall they fill the tub. Once filled, it is saturated with inert gases and fermentation starts spontaneously. The fermentation temperature is not monitored and the grapes are fermented throughout the fermentation period. Only 3,000 bottles.
