Service
It is recommended to serve it at a temperature of 10/12° in tulip glasses. To be drunk immediately but left a few years in the cellar it can give great emotions.
Pairing
"Paone" is a wine for the whole meal that goes well with rich fish appetizers, fish first courses, to try with crab linguine.
The cellar: La Vinicola di Antonio Gismondi
Antonio Gismondi's company is located in Cerreto Sannita, in the province of Benevento. Antonio's parents, Maria and Pasquale, have always cultivated the vineyard in the old-fashioned way, with manual processes, without the use of herbicides or pesticides, and they sold their grapes to the local cooperative as traditionally many other winemakers in the region did. Antonio, before becoming a winemaker, ran a restaurant in Barcelona, and here he met Massimo Marchiori and Antonella Gerosa of Partida Creus and fell completely in love with natural wine. In 2016 Massimo, after having been to Cerreto Sannita and having tried the wine of Antonio's parents, convinced the latter to bottle the wine. In 2019 Antonio moved permanently to Italy with his family, and in the same year his first vintage was released. The vineyards, about 30 years old, are located at about 350 meters above sea level on soil made up of limestone and clay. Among the rows we can find Malvasia di Candia, Falanghina, Sangiovese and Merlot. The wines, processed in stainless steel, are neither forcibly clarified nor filtered. The result is bottles of extreme expressive precision, despite a genuine spontaneity and a very authentic style. Their annual production is 4,000 bottles.
