Iago Bitarishvili's Chardakhi Chinuri is a white wine made from an ancient Georgian grape variety called Chinuri. Fermented with natural yeasts in amphorae, macerated for 6 months on the skins and aged first in the same amphorae and then for 24 months in steel. It has a golden golden color. The Iago Bitarishvili winery is located in the village of Chardakhi, in the Kartli region, characterized by a continental climate. The company was the first in Georgia, in 2005, to obtain organic certification. The vines, about fifty years old, are grown in Chinuri, one of the main autochthonous white grape varieties, spread over two hectares in the Mukharani Valley, one of the historical and best wine areas in the area. The vinification takes place strictly according to the traditional Georgian method: fermentation and aging take place in contact with the skins and stalks (chacha), and continue for several weeks depending on the vintage, in clay amphora, locally called Chinuri. Iago has amphorae over 300 years old, with a capacity ranging from 150 liters up to 3,000 liters, from which it obtains an annual production which today is around 5,000 bottles.
