"Iddu" is a white produced with carricante grapes with the addition of a small percentage of other local white grape varieties. It ages for 4 months in steel with bâttonage on the lees and 6 months in bottle. The wine obtained, not clarified or filtered, is bottled and sold the year after the harvest. It shows a deep straw yellow color. On the nose elegant aromas reminiscent of fruit, such as green apple, vegetal and mineral notes, sulphurous and hydrocarbon hints. Carricante is a white wine produced with carricante grapes with the addition of a small percentage of other local white-berry varieties. The carricante is grown in a small vineyard of 0.3 hectares on volcanic soil, rich in minerals and skeleton, located in Contrada Calderara, Randazzo 650 meters s.l.m, on the north side of Etna. The vinification is spontaneous with the only indigenous yeasts and with maceration on the skins for 3 days in steel tanks. Aged for 4 months in the same tanks with bâttonage on the lees and 6 months in the bottle. The wine obtained, not clarified or filtered, is bottled and sold the year following the harvest. The cellar: Eno-Trio
Enotrio is located in Randazzo, along the north side of Etna. The company is run by Nunzio with the help of two daughters Stefany and Désirée, who together define themselves as farmers, artisans, and winemakers. They own 3 hectares of vineyards that are located on the slopes of Etna scattered in the territory that goes from Randazzo to Bronte passing through Maletto. They mainly cultivate the native vines of the area such as Nerello Mascalese and Carricante, but experimentally planted Pinot Nero, Traminer Aromatico, Moscato Petit Grain, Chardonnay and Merlot plants. The vineyards are cultivated according to natural times and ways, linked to the phases of the moon and the little secrets that nunzio's grandmother taught him over the course of 40 years. The harvest of the grapes is manual and selected. In the cellar, only indigenous yeasts are used for fermentation in steel vats or wooden tubs. For red wines, the refinements, which last from 12 to 24 months, take place in oak barrels between barrels and second and third passage tonneaux. Whites aged in steel from one to two years. All wines of Enotrio are not stabilized, neither filtered nor clarified. The wines of Enotrio reflect the vine, the territory, the soil, the climate where the grapes come from and for this reason they are different from year to year. .
