Pacina's "Cerretina" is a white wine macerated on the skins from Trebbiano Toscano and Malvasia del Chianti grapes, aged for 14 months in large Allier oak barrels and 5 hectoliters acacia tonneaux. The nose releases intense aromas of hay, medicinal herbs, honey and wildflowers, framed by mineral and balsamic puffs.

"La Cerretina" - Giovanna Pacina
Complex white wine obtained from a blend of Trebbiano Toscano and Malvasia del Chianti. After the harvest, the grapes are fermented spontaneously with only indigenous yeasts and with a maceration on the skins for 6 days in cement tanks. The refinement continues for 14 months in 10 hectoliters Allier oak barrels and barrels acacia from 5 hectoliters. La Cerretina shows a golden yellow color. On the nose the aromas are intense and persistent with notes of yellow pulp fruit, dried fruit, spicy hints and slight mineral notes. In the mouth it is dry and warm, full-bodied, fresh and balanced, with excellent persistence..
Service
We taste it at a temperature of 10/12 ° in a tulip glass. Wine to drink immediately but can give fantastic emotions if left a few years in the cellar.

Giovanna Pacina's company is located in the municipality of Castelnuovo Berardenga in a 10th century convent surrounded by woods and the Crete Senesi. Giovanna is helped by her husband Stefano in the management of the 22 hectares of land divided between vineyards, olive groves, orchards, cereals, vegetable garden and woods. Giovanna has succeeded in the difficult task of respecting and maintaining the habitat differences present in her property so that the plant and animal ecosystems have been able to maintain their wealth and their interrelationships. Giovanna Pacina cultivates Sangiovese, Canaiolo, Ciliegiolo and Trebbiano which grow on sandy and clayey soils. The approach to the care of the vineyards is absolutely natural with the complete exclusion of any chemical substance. In the cellar, alcoholic fermentation takes place with indigenous yeasts and the wine produced is not clarified or filtered before bottling. Giovanna produces six wines; Cerretina Bianco, a macerated white, Secondo Pacina, Pacina, red wine aged in cask, Villa Pacina produced from pure red grapes, Pachna, red wine in purity from late harvest aged in large casks, and Malena, blend of red grapes.
