The Bianco della Colombaia is obtained from a blend of Trebbiano and Malvasia, two typical vines of the Tuscan territory. The harvest is manual with selection of the bunches, and in the cellar the fermentation is spontaneous in steel tanks. In the same tanks the refinement continues for 6 months. A slightly tannic wine due to maceration, earthy and deep, intense, with a nose of white flowers.

The Colombaia Bianco is a direct and immediate wine obtained from a blend of Trebbiano and Malvasia. Prolonged maceration of 3 months, soft pressing and bottling at the end of the fruity moon of February 2021. A slightly tannic wine due to maceration, earthy and deep, intense, with a nose of white flowers.

It is advisable to taste it at a temperature of 8/10 ° in tulip glasses. Daily wine.
Pairings
The Colombaia Bianco goes well with seafood appetizers, light pasta dishes, to try with a fish soup.
Winery: Azienda Agricola Colombaia
Farm La Colombaia is a small family run business located in Colle Val d'Elsa in the locality of Mensanello. Born in the seventies, when the Lomazzi family, after having worked for many decades in the wine trade, bought an old abandoned farm that restructured and extended the already existing vineyard. In 2003 the management of the winery passed to Dante Lomazzi and Helena Variara who immediately converted the cultivation of 4 hectares of vineyards to the principles of biodynamics. We find old vines of Sangiovese, Colorino, Malvasia nera, Canaiolo and some rows of cabernet sauvignon. In the vineyard, synthetic products are excluded, and in the small self-sufficient cellar the whole production process is the least invasive possible, with spontaneous vinification with only indigenous yeasts, and additives such as sulfur dioxide, but also the clarifications or filtrations are prohibited. The final products are the Tuscan red Colombaia obtained from the grapes that come from the "old vineyard", the Tuscan white dovecote from native grapes of trebbiano and malvasia, and from the "young vineyard" the red Tuscan colomabia Vigna nuova.
