Casè Bianco - Casè
Casè Bianco is a macerated white wine that is produced using four different white vines that grow in the same vineyard, mixed with other red berry varieties. This arrangement of mixed vineyards was very common in the past in the area of Val Trebbia. After the manual harvest with the selection of the best bunches directly on the plant, the vinification is carried out with only indigenous yeasts with a moderate maceration on the skins for 10 days. It then refines for several months in steel tanks. It is not filtered before it is bottled. Casè Bianco is a golden yellow color. On the nose the aromas are fruity and floral, with mineral and spicy notes. On the palate it is dry, warm, medium bodied, with good acidity.
Service
It is advisable to taste it at a temperature of 8/10 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairing
Excellent wine to combine with a dish of ffettati and cold cuts, white meats, fish dishes, to try with the classic pizza margherita.

Casè is a small company located on the hills of Val Trebbia, an area known for its great natural beauty. In 1992, two young friends, Alberto and Diego, driven by their strong passion for wine and the conviction of the return to basic things like land, energy and food, decided to leave their jobs and devote themselves full time to the production of wine. In 1998, after a careful study of the characteristics of the soil and the climate, Alberto and Diego planted the first Pinot Nero vineyards and other white grape vines. The existing ones are located at 600 m.s.l. on land of limestone and clay, and are processed without herbicides and chemical fertilizers, while the harvest is performed manually selecting the best bunches directly on the plant. In the winery, Alberto and Diego try to intervene as little as possible using only indigenous yeasts and not carrying out any type of chemical or physical intervention. During fermentation, the wines remain in contact with the skins for a time that can vary from 20 to 40 days, and the aging takes place in wooden barrels on its lees until bottling. Finally, the wine is not filtered before bottling, and for this you can see a little 'sediment in the bottles. Today the goal of Casè is to produce wines that differ from the "international taste", wines with a different taste every year, because influenced by the peculiar characteristics of the territory and the vintage.
