Produced with white grapes which are left to dry naturally in the vineyard for 2 months and aging in wood for at least 36 months. Bottled without clarification or filtration. Sol is sweet but never cloying supported by the right degree of acidity. The nose gives off spices and yellow fruits. The mouth is tense and mineral and in a very long end. Production of only 5000 bottles.

Ezio Cerruti's "Sol" is an anomalous and subversive passito wine like its producer produced with white grapes which are left to dry naturally in the vineyard for 2 months. Service
We recommend tasting the Sol at a temperature of 10/12 ° in sauterners. Wine to drink immediately but will express its best features in a few years.

Ezio Cerrutti runs a small farm located between the Langhe and Monferrato, one of the most renowned areas for growing vines. The position of the vineyards at about 400 meters above sea level, with significant slopes, helps create ideal conditions for the ripening of the grapes and the quality of the wine. The clay-limestone soil, rich in active limestone, favors a good balance between water retention and drainage, fundamental elements for quality viticulture. The planting density of 5,000 vines per hectare allows for a good concentration of grapes and careful management of the vineyards. The cultivation practices adopted by Ezio are attentive and respectful of the environment: the vineyards are grassed, that is, left covered with spontaneous or cultivated vegetation, and are treated exclusively with copper and sulfur, avoiding systemic products. This choice allows for maintaining a balanced ecosystem and producing an authentic wine, respectful of tradition and the environment. In some particularly favorable years, Ezio also produces a selection of grapes affected by noble rot (Botrytis cinerea), called Sol Botrytis. This limited and niche production takes advantage of the favorable climatic conditions to obtain a sweet and complex wine, characterized by intense aromatic notes and a high concentration of sugars and aromas. In short, Ezio Cerrutti combines traditional techniques and a deep respect for the territory, creating high-quality wines that reflect the unique character of his land and his sustainable practices.
