Ottavio Funk is a sparkling wine that comes from red grapes with the method of refermentation in the bottle. After manual harvesting and destemming, fermentation is spontaneous in the cellar with only indigenous yeasts with maceration on the skins for a week in steel and cement containers. Bottled the following spring without the use of sulfur dioxide addition or filtering. Ottavio Funk is ruby red in color. The nose has floral and spicy aromas typical of Grignolino.
