PÉT-NAT WINES

It is a traditional and artisanal method that the farmers used for the production of their wine. In the past the harvests were made in October, and with the arrival of the first winter cold the alcoholic fermentation stopped, leaving residual sugar. With the arrival of the first warm spring, fermentation resumed and the sugars were transformed into alcohol and carbon dioxide that remained inside the bottle, creating the sparkling wine, and since the yeasts were not broken they also remained inside, thus creating the "sur lie". The same procedure is used by modern winemakers who sometimes, instead of residual sugars, add sweet must. This technique is also called ancestral method referring to the French ancestral mèthode. The wines produced in this way are more veiled, with a fine bubble, and a taste of greater complexity, but certainly what amazes, is that the bottle disappears in a flash.

The Naturale Frizzante Sui Lieviti is a light and very lively wine produced with natural refermentation in the bottle. Deep yellow color, subtle and persistent perlage. On the nose floral and fruity scents, flanked by notes of citrus fruits, yeast and bread crust. In the mouth it is lively, with a good body, perfectly balanced by a good acidity. The yeast on the bottom of the bottle gives the wine softness and longevity.

A rosé wine outside the box as per Lammidia style, in which the freshness and ease of drinking are sought. Obtained from red grapes that are harvested when they have a lower sugar level, in order to have greater freshness and acidity. Refine in steel and fiberglass. It has a beautiful pale pink color. The nose has hints of red fruit, such as strawberry, black cherry and pomegranate, followed by notes of Mediterranean scrub. On the palate it is crunchy, nice fresh, and with an overwhelming drink.

The Tunia Sottofondo is a sparkling wine made from white grapes through refermentation in the bottle following the addition of the Vin Santo must. It has a slightly veiled orange-yellow color. On the nose the aromas range from ripe fruit, to hazelnut, and vegetable. In the mouth it has a good dose of acidity, and the bubbles and acidity make the body slightly tannic, excellent drink.

The "Macerato" sparkling wine from Cantina Furlani is produced using white grapes. The vinification is carried out spontaneously without added yeasts and without temperature control, with a short maceration. For decanting the lunar cycles are followed. The refermentation in the bottle takes place with indigenous yeasts and the wine is clarified with the only use of winter cold. It is not filtered. Zero sulfur dioxide added. "Macerato" sparkling wine has a beautiful pink color. Fruity aromas with spicy notes on the nose. In the mouth, its freshness and great drinkability stand out.

Pr4 Oxyd Insolente is a wine made from pure white grapes that come from a vineyard of over 60. Harvested by hand in boxes in mid-September. Destemming and crushing of the bunches and spontaneous fermentation at room temperature in cement tanks, racking and resting on fine lees until February. Barrel oxidation drains before bottling. Without added sulphites.
