Vin de France "Rouchefer" by Domaine Réne Mosse is a fresh and dynamic wine obtained from Chenin blanc grapes. For the creation of Champagne Extra Brut "Bistrøtage" B.19, Charles bought the grapes from his mother Francoise Martinot, which is why both names are listed on the label. The B.19 cuvée is made from 100% Pinot Noir grapes from the 2017 harvest from the Chervey cru. One year of aging 50% in neutral oak barrels, and 50% in steel tanks. It is rosé Champagne with a predominantly fruity, citrus and mineral aromatic profile. The sip is fresh and dynamic, but very soft.

Nicolas Joly's "Clos de la Coulée De Serrant" is a great dry white wine with a straw yellow color tending to golden. Thierry Puzelat's KO in Cot We Trust is made from grapes of the Côt vine, better known as Malbec. The grapes for the Ko come from a vineyard of 1905 and one of 1973 still free of foot with a yield of only 25 hl / ha. Spontaneous fermentation and aging in wooden barrels. It is an amazing wine with an intense ruby red color with an aromatic nose of black fruit notes and spicy features. The mouth is full but fresh with hints of black cherry and licorice. The Jurançon Sec “Vitatge Vielh” from Clos Lapeyre is made from a blend of Gros Manseng, Petit Manseng, and Courbu grapes from old vines dating back to the 1940s. Aged for one year in barrels on the lees and six months in stainless steel. Aromas of custard, aromatic herbs, and citrus; the palate is taut and vibrant, with crisp acidity.

Antoine Lienhardt's Chardonnay is a hymn to the rock and light of Comblanchien. Born from biodynamic vineyards where the bedrock emerges just a few centimeters above the ground, this white wine is pure mineral tension.
