Bamboo Road - Stefano Legnani
Bamboo Road is the name of the wine inspired by the bamboo canes surrounding the vineyard. As a tradition it is obtained from a blend of white grapes; Stefano's ambition is to retrace a journey in the past when the locals grab the grapes in full ripeness. Grapes coming from vineyards under concession by wealthy landowners. In our days Stefano continues this tradition by running some middle-aged rows around the 80-year-old neighbor's peasant estate. The grapes are harvested in full maturity, and after pressing and subsequent spontaneous fermentation, they are left to macerate on the skins for 14 days. After finishing, the aging continues until June in steel tanks. No clarification or filtration before bottling. Intense straw yellow color. Intense aroma nose with ripe fruit, flowers, citrus notes and minerals. On the palate it is dry, enveloping, polposo with good acidity and a persistent finish.

We taste it at 10/12 ° in tulip goblet. Daily wine but left a few years in the cellar can give you great emotions.
Pairing
Great with a salty salmon cake, fish dishes, to try with a fish soup.
Cellar: Stefano Legnani
Stefano Legnani arrives in Sarzana, in the hamlet of Badia, after a life spent in Bologna as an insurance agent. Small producer cultivates two hectares, and his vineyards are less than 10 years old. He loves natural wine and takes care of his vineyards in a maniacal way; prohibited the use of synthetic products, uses only copper and sulfur, makes green manure and mulches to make the soil fertile and relies on earthworms for subsoil operations. In the cellar spontaneous fermentations, indigenous yeasts, maceration on the skins, limited use of sulphites and no filtration or clarification. Three wines produced; the "Bamboo Road" obtained from grapes come from old rows that Stefano manages by farmers in the area, the "Ponte di toi" produced with maceration on the skins, and finally Il Loup Garou, a tribute to Willy De Ville, with the same grapes of the "Ponte de Toi" but with a longer maceration. Stefano is part of Vinnatur and his wines are immediately snapped up especially in Japan where he is considered a real star. Wines are elegant, delicious, mineral, and respectful of the soil and the environment.
