Calaverna - Andrea Pilar
A wine that celebrates Umbria's most widespread and enigmatic white grape variety, crafted in an unusual context. Distinctive features and clean lines combine in a play of dichotomies that deeply explores the grape's pulp. Fermentation takes place in stainless steel tanks for 15-20 days, with frequent stirring on the fine lees. Malolactic fermentation is partially or completely absent, depending on the vintage, while maturation takes place in concrete vats to preserve integrity and freshness. The color is intense yellow, with aromas of grape skins, pollen, mineral notes, and fresh almonds. On the palate, it displays ampleness at the start, gradually developing more depth, with a refreshing and flavorful citrus finish.

We taste it at a temperature around the 6/8° in tulips goblets.
Pairing
Great with first fishy fish dishes, to try with some of the weasel filets wrapped in speck.

Andrea and Pilar Gritti, brother and sister, started an innovative project within the family business, I Girasoli di Sant'Andrea, after having acquired training experiences in agriculture and linguistic mediation. Their vision is based on clean and sustainable agriculture, abandoning conventional practices to embrace a more authentic and radical approach. Located in Molino Vitelli, a hamlet of Umbertide, the company benefits from a favorable climate, with breezy hills, cold winters and mild springs. These conditions, combined with alluvial soils rich in stone and pebbles, create an ideal environment for the late ripening of the grapes, preserving aromas and acidity even in the hottest years. The vineyards, some of which date back to 1998, are located at an altitude that varies between 250 and 400 meters, with a predominance of Sangiovese, flanked by Montepulciano, Ciliegiolo, Pinot Noir and a small amount of Syrah. White varieties such as Grechetto, Trebbiano and Malvasia also find space in the vineyards. In the cellar, Andrea and Pilar's philosophy is reflected in a simple and rigorous winemaking process, free of artifice. The maturation of the wines, which takes place in steel, concrete or wood, is designed to enhance the fruit and character of the terroir, without overpowering it. The company produces around 25,000 bottles a year, divided into seven labels, thus representing a new idea of wine and a company rooted in tradition but projected towards the future.
