Muscatedda - Marabino 

The “muscatedda” is the local name of the first vineyard that is harvested from the only native white grape variety in the Val di Noto area, the Moscato di Noto. Aromatic vine used for the production of natural sweet, passito and liqueur wines, here interpreted in a dry version. From a vineyard facing west, at 65 meters above sea level, grown on white-limestone soil which reflects the light and gives salinity to the wine. The white Moscato from Val di Noto grown on these soils gives vines with a low yield and wines with delicate aromas, typical of the Mediterranean scrub. The well-ripe grapes, harvested between mid and late August, are vinified in steel with the skins for about fifteen days and left in steel until the following spring with continuous bâtonnage, carried out according to the phases of the moon. The label depicts the hill where the vineyard is located, with the typical dry stone wall borders together with a cypress, olive and carob trees, the only evergreen trees in the area.

Service

We recommend serving it at a temperature of 16/18 ° in tulip glasses. Wonderful evolution in the bottle with an ideal consumption in a few years if well preserved in a cool, damp and dark cellar in a horizontal position.

Pairing

It goes perfectly with first courses with vegetables, second courses of fish, to try with a perch gratin.

The cellar: Marabino

The Marabino company is located in Contrada Buonivini in the heart of Val di Noto, in the province Of Siracusa. The activity began in 2002 by Pierpaolo Messina, former entrepreneur in the Interservice group, who restructured the cellar and built an old Saracen tower to build a resort. The cultivated hectares are around 30 to about seven kilometers from the sea, and mostly native local vines are bred, such as Moscato di Noto and Avola Black, together with a selection of different Chardonnay clones. The vineyards, cultivated by the agronomist Luca Gentile, are bred in biodynamics and grow on different types of soil; From limestone white reflecting the rays of only Mediterranean clay and black clay that are rich in natural elements, all then enjoying the breeze of the dominant winds in the area. The wine cellar is run by the Salvatore Marino enologist who prefers spontaneous fermentation, minimal use of sulfur and refinement in steel or oak barrels to not ruin what the vine gives. All Marabino wines have a vibrant tension that makes them enjoyable wines with a great ease of drinking.
