Allaria - Mastro di Baglio

Allarìa by Mastro di Baglio is a white wine made from 100% Grillo grapes. The grapes come from the hinterland of Marsala and are found on limestone soils. Refine for a few months in steel. The nose offers aromas of apricots, orange peel, tropical fruit. In the mouth it has an excellent acidity that gives freshness and makes you want to drink yet another sip. It is a no-frills, direct wine that strikes the senses.

Service

We taste it at a temperature of 8/10° in a tulip glass. Wine to drink immediately but can give fantastic emotions if left a few years in the cellar.

Pairing

A wine for any meal that goes perfectly to accompany fish dishes such as pasta with pesto alla trapanese or the traditional cous cous with fish.

Elios Best of Sicily is a young Sicilian winery located in Alcamo, in the province of Trapani. The idea stems from the passion of Nicola and Roberto, two friends in love with their land, who come from different work experiences and decide to take the family farms by hand to develop their potential. Not only producers of grapes and olives, but also of honey in order to close the supply chain. But their great project is that of natural wine, which is pure expression of the nature and the territory from which the grapes come. This is how Modus bibendi was born with the strong conviction that the wine should be produced through a natural vinification that excludes invasive interventions and the use of chemical substances. Elios best of Sicily produces three wines from autochthonous Sicilian grapes; a red wine from Nero d'Avola grapes, a white wine obtained from the Grillo grape and finally a macerated product from a blend of Grillo, Catarratto, Zibibbo. The vinification of the wines takes place at the cellar of a friend of theirs in Gibellina, and the whole process is followed by a friend of their oenologist. The first vintage is that of 2015 is our first vintage, in which they have bottled 3200 bottles of white and 3200 of red. The wines of Elios Best of Sicily are authentic wines, which embody the land from which they come.
