Ortaccio Bianco by Cantina Ortaccio is a carefree wine with a disarming drink made from local white grapes that macerates on the skins for 10 days. Spontaneous fermentation without temperature control with its own yeasts and aging in chestnut and oak barrels of third passage.

Service

It is advisable to taste it at a temperature of 8/10 ° C in tulip glasses. Wine to be drunk immediately but holds up very well time.

Pairings

Perfect with fish and white meats. Good with spicy first courses. To combine with risotto with baby calamari, clams and zucchini.

Winery: Cantina Ortaccio

Cantina ortaccio, a stone's throw from Lake Bolsena and a few kilometers from the border with Tuscany, is the project carried out by Massimo, an innkeeper and a long-time wine lover, and Patrizia, who came to wine later. It is a life changing project! The vineyards, some of which are ungrafted, are located between Gradoli and Latera, in a territory of volcanic origin located between 400 and 550 meters above sea level. The vines, grown without the use of synthetic products, are those of the local tradition: Trebbiano, Procanico and Malvasia for the white and Sangiovese, Grechetto and Ciliegiolo for the red. The grapes, harvested on the same day, are de-stemmed by hand, pressed with the feet and fermented with only indigenous yeasts. The cellar is the result of Patrizia's work as an architect: the narrow tunnels, dug by hand in the tuff in antiquity and now restored, give life to an ideal environment with a constant temperature both in summer and winter. Massimo and Patrizia recover ancient flavors and offer serious, sincere and intact wines.
