Spontaneous fermentation in cement containers and amphorae and very low use of sulfur. A fruity wine, sealed with a fresh sip of overflowing vitality. or in demijohn where it ages for about 2 years.

It is recommended to taste it at a temperature of 8/10 °. Daily wine but withstands a few years of aging very well.
Pairings
Excellent with fish-based appetizers, lasagna with courgettes and prawns, to try with de paccheri allo scoglio.

Jacopo Stigliano's company is located in Monteveglio, a village in Valsamoggia in the province of Bologna, on the border with the province of Modena and the Apennines.His love for wine begins by attending sommelier courses since the age of 16 years old and, after a degree in Food History and Culture, he starts wandering around Italy and the world accumulating experiences in various vineyards and cellars from some of the best masters of natural wine such as Styefano Amerighi. Finally in 2015 the good Jacopo gives life to his project by recovering old abandoned vineyards, in many of which an archaic form of farming is practiced: the tree-lined, with vines supported by a living tree. The vines, grown mainly with local varieties, are located at an altitude of 200-300 m. s.l.m. In the vineyard the work is manual, no pesticides, systemic and herbicides are used. The cellar operations are absolutely artisanal. Two wines are produced: Buriana, from native white berried grapes of the territory, and Hiraeth from red berried grapes.
