Pinot Grigio - Slavcek
Pinot Grigio from Slavcek is an intense and structured wine macerated on the skins obtained from the grapes of the same name. The grapes come from vines of over 20 years that grow naturally without the aid of any chemical product. Manual harvest, and in the cellar fermentation takes place spontaneously with maceration in contact with the skins which lasts about 8 days and takes place in barrique. It does not undergo any clarification or filtration and carries out malolactic fermentation in small wood. Aging that takes place in barriques for 24 months in contact with the fine lees. Copper-colored, the nose opens on intense hints of ripe yellow pulp fruit, with a nice mineral and herbaceous hint. In the mouth, the sip is large and full-bodied, with a nice acid and sapid vein. Harmonious and persistent finish.
Service
We taste it at a temperature around 8/10 ° C. Wine to drink at once but if you sip a few years in the cellar can give great satisfaction.
Pairings
The Pinot Grigio by Slavek is ideal for fish dishes, to be tried with a salad of roasted octopus on saffron potato cream.
Cellar: Slavcek
Slavcek is located in Potok, a name that in Slovenian means "in the middle of the woods" and is one of the oldest Slovenian cellars, in fact, it can be found in old documents from the second half of the 1800s. The winery today led by Frank and Alenka Vodopivec is immersed in an expanse of woods, surrounded by officinal herb meadows. Their ideal is to best express the terroir, tradition and essence of cultural values through the winemaking techniques of their ancestors. The hectares cultivated are about 6, and are located on marly soils, perfect for the ripening of the grapes and, consequently, for the production of excellent wines, and enjoy an excellent climate given by the warm sea breezes that come from Friuli perfect to favor the right temperature range between day and night which favors the development of aromas in the grapes. Among the rows, different varieties of autochthonous and international grapes are grown, both white and red, such as merlot, refosco dal peduncolo rosso, ribolla giallo, pinot grigio, tocai from Friuli, chardonnay and italic riesling. In the vineyard, synthetic products are not used, but the canons of natural agriculture are followed with the utmost attention and care for the plants. In the cellar the same care is used as in the vineyard with spontaneous fermentation and aging in steel or barrel. The wines produced are different but all brought together by linear and clean sips, so as to genuinely communicate the attractiveness of the aromas and aromas typical of each variety.
