JNK's Rebula is a macerated white wine obtained from the homonymous grapes which grapes come from vineyards that grow on soils made up of alternating layers of marl and noble clays. Rigorously selected harvest and in the cellar the grapes are fermented spontaneously with a 12-day maceration on the skins. Aging for 15 months in old 500 liter barrels. Golden yellow color with intense and complex aromas of dried fruit, honeyed notes and bread crust. In the mouth it is full-bodied, enveloping, rich in minerality, with good freshness and the presence of a light tannin.

Service
It is advisable to taste it at a temperature of 14/16 ° in tulip glasses. Wine to be drunk immediately but can be safely enjoyed in a few years in order to appreciate its full potential.

It is advisable to combine it with seafood, fish appetizers, freshwater fish, to try with a cheese platter.
Winery: JNK
The Mervič JNK winery is located in Šempas, a few kilometers from Nova Gorica and the Italian border. The company was founded in 1890 by Ivan Mervič, nicknamed Jnk, who bought several hectares of vineyards and planted the first 200 vines. Around 1910 the activity passed to his son Peter who further expanded the vineyards, and from this to his son Oscar. The tradition stopped for about a decade in the seventies of the last century, but resumed after the year 1977, when tradition and love for the vineyards continued with Andrej and Boleslav i with Oscar's sons, who knew how to bring quality of JNK wines at high levels. Today JNK includes 3.5 hectares of vineyards grown in Ribolla, Chardonnay, Pino Bianco, Merlot and Cabernet Sauvignon that grow on soils consisting of alternating layers of marls and noble clays. They enjoy a special microclimate, formed by the clash of cold winds from the north and those myths coming from the Adriatic Sea. One of the smaller vineyards is located in the village of Šmihel where there is also a small church. Both the village and the church are dedicated to San Michele from where they derive their name. The wine made from the grapes of this vineyard bears the name Sv. Mihael. In the vineyard the grapes are harvested by hand and no chemicals are used, respecting the philosophy of JNK which is based on the belief that only the quality of the raw material guarantees the production of high quality wines. In the cellar the macerations last 3/5 days for the white grape varieties and for red berry varieties they reach 30/40 days. The wines are aged in oak barrels for 1-2 years. Unique, surprising wines, produced in the most natural way possible, with the utmost respect for nature.
