Ottocento Bianco is a maceration wine obtained from a blend of Malvasia Istriana, Sauvignon Blanc, Pinot Grigio and Chardonnay. Spontaneous vinification with only indigenous yeasts and maceration on the skins for 10 days. Aging of 12/14 months in large oak barrels follows. A wine with an amber yellow colour. The nose reveals aromas of fruit, with notes of resin and balsamic. On the palate it is warm, fresh, powerful and mineral, infinite.

Ottocento Bianco - Giorgio Clai

Ottocento Bianco is a macerative wine obtained from a blend of Malvasia Istriana, Sauvignon Bianco, Pinot Grigio and Chardonnay. Vigne with middle age of 40 years cultivated in biodynamic. Spontaneous vinification with only native yeasts and maceration on 10 days skins. This is followed by aged 12/14 months in large oak barrels. Ottocento Bianco has amber color. The nose recognizes scents of fruit, with resin and balsamic notes. The sip is hot, fresh, powerful and mineral, infinite.

Service

We recommend tasting it at a 10/12 ° temperature in tulip goblets. Wine to drink immediately but leave some ano in the cellar can give great satisfaction.

Pairing

Excellent with first fish dishes, vegetable soups, to try with curly noodles.

The company of Giorgio Clai is located in the village of Buje, in Krasica, Croatia. Giorgio was not born as a winemaker, he ran the family restaurant near Trieste until in 2000 he decided to change his life and dedicate himself to wine production. Buy 6 hectares of vineyards located on clayey-sandstone soils and enjoying excellent geographic and climatic conditions, the Ucka and the Uvala river from the Quieto River meet in the hills around Buje , making this place an ideal place for grape cultivation. Giorgio Clai manages its second vineyards the principles of Biodynamics, aiming for a quality product with high and low yield density, with minimal treatments and exclusive use of copper and sulfur. In the cellar the grapes are vinified with spontaneous fermentations, with long macerations on the skins, without the use of selected yeasts and refinements in large wooden barrels. Giorgio Clai produces 5 labels: the "Sveti Jakov", from the grapes a malvasia, the two "Ottocento" labels, obtained from a blend of white grapes and a cut of red grapes, the "Brombonero", to be refined in purity and the "Tasel", from gooseberry grapes. The wines of Giorgio Clai are children of the land where they are born.
